500g Skinless Chicken Breasts, cubed*
2 Shallot, peeled & diced
3 Garlic Cloves, crushed
1 heaped tbsp Curry Powder
2 level tbsp Peanut Butter
1 tbsp Runny Honey
2 tbsp Soy Sauce
1. To make the marinade mix together the shallots, garlic, honey, curry powder, peanut butter & soy sauce in a bowl. Add the chicken & coat with the marinade. Put into the fridge to marinate for 3-4 hours or more.
2. Preheat the grill, or bbq, to medium. Thread the chicken onto skewers & cook for about 10 minutes, turning regularly.
