-500g Prawns, peeled & deveined
-1 Celery Stick, finely diced
-2 Spring Onions, finely chopped
-2 tbsp Fresh Coriander, chopped
-1 Garlic Clove, finely chopped
-½ tsp Sea Salt Flakes
-½ tsp Ground Chipotle, or Hot Chilli Powder
-1 Lime, zest & juice
-2 tsp Olive Oil
-2 tbsp Reduced-Fat Mayonnaise
-4 small Burger Buns
-2 slices Reduced Fat Cheese, halved
-4 Lettuce Leaves
1. Process 450g of the prawns in a food processor. Dice the remaining prawns. In a medium bowl, combine the pureed prawns with the diced prawns. Add the celery, spring onions, coriander, garlic, salt, spice, lime zest & juice & mix well. Form into 4 patties.
2. Heat the oil in a large, non-stick frying pan over a medium-high heat. Add the prawn burgers & cook for 3-4 minutes or until browned underneath. Flip, add the cheese slices to the top of the burgers, & continue to fry for a further 3-4 minutes, or until browned, cooked through & cheese has started to melt.
3. Add the burgers, mayonnaise & lettuce leaves to the burger buns & serve immediately.
