16 Scallops, cleaned
1 tbsp Butter
1 tbsp Vegetable Oil
1 tsp Garlic, crushed
1 tsp Fresh Ginger, grated
1 small bunch Spring Onions, finely sliced
1 Lime, grated zest & 3 tbsp of juice
1 small Red Chilli, finely diced
1. Slice each scallop in half horizontally making two circles from each scallop.
2. Preheat a large non-stick frying pan. Add the butter & the oil. Allow the butter to melt before adding the ginger & garlic. Fry for 1 minute, stirring constantly. Add the spring onions & fry for a further minute.
3. Add the scallops & continue to stir-fry over a high heat for 1-2 minutes. Stir in the lime zest, chilli & lime juice. Cook for another minute.
4. Serve immediately, with pan juices spooned over the scallops, with rice or vegetables. Note recipe calculations are for the scallop dish only.
