Freakin Hot Chicken Curry

 SERVES: 4

INGREDIENTS: 

-8 Chicken Thighs, skinned*
-250ml Chicken Stock
-400g can Chopped Tomatoes
-3 tbsp Tomato Puree
-2 Garlic Cloves, crushed
-2 Red Chillies & 5 Dried Chillies
-¼ tsp Stevia
-1 tsp each Salt & Paprika
-1 tbsp Hot Curry Powder
-1 tsp each Cumin Seeds, Ground Cumin & Ground Coriander
-1 Onion, grated
-½ tsp Vegetable Oil
-4 Curry Leaves
-Salt & Pepper to season

METHOD: 

1. Place the tomato puree, garlic, fresh & dried chillies, salt, stevia, chilli powder, paprika & curry powder in a food processor together with 60ml of water & blend until smooth.

2. Add ½ tsp of vegetable oil to a large saucepan & place over a medium heat. Add the cumin seeds & fry for just 1 minute before adding the onion & curry leaves. Cook for a further 4-5 minutes, adding splashes of water if necessary to stop the onions from catching & burning.

3. Add the paste from the food processor & fry for 2-3 minutes. Stir in the coriander, cumin, chopped tomatoes, chicken stock & chicken thighs. Bring to a boil. Cover, reduce the heat to low, & cook gently for 35-45 minutes, stirring occasionally. Season to own taste & serve immediately.
