1 tsp Olive Oil
1 Red Onion, roughly chopped
200g Chestnut Mushrooms, roughly chopped
3 tsp Chilli Paste
1 tbsp Smoked Paprika
1 tbsp Ground Cumin
1 tbsp Garlic Granules
1½ tbsp Toasted Chopped Nuts
2 x medium slices Wholemeal Bread
handful Fresh Coriander
120g Dried Golden Breadcrumbs (panko)
5g Plain Flour
1. Add olive oil to large non-stick frying pan over a medium heat. Heat the onions & cook for 2-3 minutes before adding the mushrooms & all the spices. Cook for 5 minutes, stirring occasionally to combine all the flavours. Add the chopped toasted nuts & cook for a further 2 minutes.
2. Put the mushroom mixture into a food processor with the bread & coriander. Blitz until it forms a smooth paste.3. Flour a board & divide the burger mix into 5 portions. Make into 5 fat burgers & chill in the fridge for at least an hour before cooking on a bbq for 10 minutes, turning once during the cooking time.
