Fake-away Chicken Fried Rice

 


SERVES: 2

INGREDIENTS: 

-100g Cooked Rice, or Microwave Packet Rice

-½ tbsp Olive Oil

-2 cooked Roast Chicken Breasts

-50g Mixed Frozen Vegetables

-2 tbsp Spring Onions, chopped

-1 Egg

-1 tbsp Soy Sauce

-½ small Onion

-2 Garlic Cloves, crushed

METHOD: 

. Chop the onion. Heat the olive oil in a large non-stick frying pan, over a medium-to-high heat. Add the onion, crushed garlic & mixed vegetables. Stir everything together & cook for 5 minutes.

2. Meanwhile whisk the egg in a small bowl & shred the cooked chicken.

3. Move the vegetables to one half of the pan. Pour the egg into the empty half of the pan. Scramble the egg by continously stirring until it is cooked through.

4. Next add the shredded chicken & cooked rice to the pan. Stir everything together. Add the soy sauce & stir again. Heat through for about 5 minutes until the chicken & the rice are hot.

5. To finish add the chopped spring onions, stir through & serve immediately.
