-200g Lamb, cubed
-1 small Onion, roughly chopped
-1 medium Red Pepper, roughly chopped
-1 medium Carrot, thickly sliced
-200g Sweet Potato, chunky cubes
-2 medium Tomatoes, roughly chopped
-2½ cm Root Ginger, sliced
-1 tsp Salt
-Salt & Pepper to season
1. Preheat a large deep saucepan. Heat the oil & stir-fry the lamb for 1-2 minutes until sealed all over.
2. Add all the other ingredients, bring to a boil, cover & simmer over a low heat for 35 minutes. Season to own taste & serve immediately.
