-2 medium Eggs
-10g Pepper, finely chopped
-20g Cherry Tomatoes, finely chopped
-20g 50% Reduced Fat Cheddar, grated
-10g Red Leicester, grated
-30g Cooked Ham, finely chopped
-¼ tsp Dried Basil
-Salt & Pepper to taste
1. Use a large mug. Whisk the eggs in the mug. Add all the remaining ingredients, season to own taste & whisk again.
2. Microwave for 2½ minutes. Rest for 1 minute & serve immediately.
