Christmas Butter Bean Bake

INGREDIENTS:
 

-800g Tofu Hot-Dog Sausages*
-1 tbsp Olive Oil

-1 medium Onion chopped

-300g Chestnut Mushrooms halved

-100g Red Pepper, in strips

-1 Garlic Clove, finely diced

-400g can Butter Beans, rinsed

-400g can Chopped Tomatoes

-1 tsp Paprika

-1 tsp Hot Sauce

-50g dried Breadcrumbs (panco)

-5g Sugar

-100g Vegan Block 'Cheese'*, grated*in UK Taifun Vegan Weiner available in Waitrose*Violife is a UK block 'cheese' brand that's widely available

METHOD:

1. Preheat the oven to 180c (160 fan), 350f, gas mark 4.
2. Cut the 'sausages' into chunky pieces. Heat the oil in a non-stick frying pan & add sausage chunks. Brown them on all sides for 3-5 minutes. Add the onion, mushrooms & pepper. Cook for another 5 minutes, stirring occasionally.
3. Add the garlic & paprika & cook for a minute, stirring constantly to make sure the paprika is well distributed & the garlic doesn't burn. Next add the butter beans, tomatoes, sugar & hot sauce. Stir well.
4. Season with salt & pepper to taste, stir well & transfer to a roasting dish. Mix the breadcrumbs with the 'Cheddar' & sprinkle on top. Bake for 25 minutes or until the top is browned.
