SATAY CHICKEN BREAST PIECES

INGREDIENTS:

  • 200g chicken breast pieces

  • 1lime juice and zest

  • 2 lemon grass stalks chopped

  • 5g ginger

  • 5g garlic

  • 40g crunchy peanut butter

  • 1⁄4 tsp cumin

  • 1⁄4 tsp turmeric

  • 80g 0% fat natural yoghurt (not greek yoghurt)

  • 40g shredded coconut

  • 5g stevia

  • 5g fresh coriander 

 

METHOD:

  • Slash deep cuts into the chicken breast pieces

  • In a food processor whizz together the lime zest, lime juice, lemongrass, ginger, garlic, peanut butter, yoghurt, stevia, coconut and spices

  • Pour over the chicken pieces and add to fridge for 3 hours

  • heat oven to 190ºc, line a baking sheet with foil spray with low cal spray

  • Place chicken on tray and roast for 45 mins to 1 hour
