FRESH ASIAN BEEF SALAD

INGREDIENTS:

  • 60g rice noodles

  • 1 lime juice

  • 250g beef strips

  • 5 spice seasoning

  • 20g olive oil

  • 20g garlic chopped

  • 10g ginger chopped

  • 10g stevia

  • 50g red chilli finely sliced

  • 1 handful chopped coriander

  • 15g light soy sauce

  • 1 handfull of fresh mint

  • sea salt

  • black pepper

  • 30g roasted peanuts

  • 100g spring onion

 

METHOD:

  • Soak noodles in a large bowl of water until soft, drain and return to bowl

  • In a hot pan/wok fry the beef and ‘5 spice’ in the olive oil until brown and crisp

  • Add garlic, ginger and stevia and cook for a further 2 mins

  • Remove pan from heat and add beef to the bowl of noodles

  • Stir in and add spring onions, lime juice, soy sauce, chillies, coriander, mint and peanuts

  • Season to taste
