SPICED SWEET POTATO WEDGES

INGREDIENTS:

  • 1tsb chilli flakes

  • 1tsb finely chopped tyme

  • 1tsp finely chopped rosmary

  • 10g garlic cloves

  • zest and juice 0.5 lemon

  • 600g sweet potato chopped into wedges

  • salt (to taste)

  • pepper (to taste)

  • 15g olive oil 

 

METHOD:

  • Heat oven to 200ºc

  • Using a pestle and motor bash together the herbs, chilli, garlic, salt and pepper

  • Spoon mashed mix into a large bowl and stir in lemon zest and juice and olive oil

  • Add the potato to the bowl and toss together

  • Arrange potato skin side down onto baking tray and back for 30 - 40 mins until crisp but soft on the inside
