MAPLE & SWEET ONION PORK

INGREDIENTS:

 

600g pork tenderloin fillets

2tbsp black pepper

fry light cooking spray

120g red onion

150ml cider vinegar

55ml maple syrup

handful of chopped parsley 

 

METHOD:

  • Season meat on all sides with salt and pepper

  • Spray pan and add medium to high heat

  • Sear the meat on both sides until nicely browned and remove from pan

  • Spray pan again, return to a medium heat and add the onion, cook for 5 minutes

  • Pour in cider vinegar and let reduce for 1 min

  • Add in maple syrup and stir in

  • Immediately add pork back to pan for 5 minutes or until cooked through

  • Serve the pork and spoon over excess sauce from the pan

  • Scatter with chopped parsley
