INGREDIENTS:

 

100g tomato 

100g field mushrooms 

75g bacon medallions 

1 egg 

70g asparagus
100g baked beans

low calorie cooking spray

 

METHOD:

  • Pre heat grill to high

  • Sit a grill try on top of the kitchen surface, half the tomatoes and trim stalks from mushrooms, chop ends off asparagus, and add to grill tray

  • Spray vegetables with cooking spray and sprinkle salt and black pepper

  • Place the grill tray under the grill for 5 minutes turning the asparagus regularly

  • Whilst cooking the veg add a pan of water to the hob to boil

  • After the 5 minutes add the bacon medallions to the grill tray

  • Cook for a further 4-5 mins until bacon is cooked​

  • Place beans in a microwavable bowl, cover with a place and heat on full power for 1 minute until beans are cooked through

  • With a wooden spoon stir the boiling pan water clockwise and with the water still spinning crack egg into pan to poach for 2-3 minutes 

  • Add to all ingredients plate
